Onions Not Caramelizing

Why it happened

Caramelization needs dry heat and time. Too much moisture or crowding keeps onions steaming instead of browning.

The fix

Save
  1. 1 spread onions in a wide skillet with 1 tablespoon oil
  2. 2 raise heat to medium and cook uncovered, stirring occasionally
  3. 3 add a splash of water to deglaze and scrape up browned bits

If it's still wrong

  • Add a pinch of sugar to accelerate browning.
  • Roast onions at 425F for 10 minutes.
