  • lemon juice
  • salt

Why it happened

Raw garlic compounds mellow with heat. Fat and acid soften the sharpness and bring the soup into balance.

The fix

  1. 1 simmer for 5 minutes to mellow the garlic
  2. 2 stir in 1 tablespoon butter or cream
  3. 3 add a squeeze of lemon to balance

  • blend in cooked vegetables to dilute
