Why it happened
Barley is dense and needs prolonged simmering to hydrate the center. Extra liquid and gentle heat finish the cook.
The fix
- 1 add 1/2 cup water or stock and simmer covered for 10 minutes
- 2 stir in 1 teaspoon olive oil for a smoother mouthfeel
- 3 finish with herbs and salt once tender
If it's still wrong
- Use in a soup where it can finish cooking.
- Toast in a skillet for a nutty, crunchy grain salad.
Prevent next time
- Soak barley for 30 minutes before cooking.
