Breakfast Burrito Soggy

Why it happened

Tortillas become soggy when steam from hot fillings condenses on the interior surface. The starch in the tortilla absorbs this moisture and the structure softens. Dry heat (skillet or air fryer) drives off the condensed moisture and partially re-crisps the tortilla's exterior. Cheese against the tortilla provides a fat layer that's less permeable to water than plain tortilla.

Prevent next time

  • Let hot fillings (especially eggs and potatoes) cool for 1–2 minutes before wrapping — this prevents the initial steam burst that soaks the tortilla.
  • Use a thicker, burrito-size flour tortilla; smaller or thinner tortillas have less structural resistance to sogginess.
