Calamari Chewy
Tough, rubbery calamari is either slightly undercooked or overcooked — here's how to tell the difference and fix either problem.

Why it happened
Squid has a unique cooking behavior — it's tender below 2 minutes of cooking and becomes tender again after 30+ minutes of braising. The zone between 2 and 30 minutes is the rubbery zone, where the muscle proteins have tightened but haven't yet broken down. Fried calamari cooked for exactly 60–90 seconds at 375°F is tender; anything longer and it crosses into the rubber zone. Braised calamari at low heat for 45 minutes re-tenderizes through collagen conversion.
The fix
- 1 Slice off a piece and taste — if it's chewy but not hard, it needs MORE cooking, not less. Calamari has two tender windows: under 2 minutes and over 30 minutes
- 2 If slightly undercooked, continue in a hot pan with olive oil, garlic, and a splash of white wine for an additional 20–30 minutes until tender
- 3 If overcooked dry (from frying), serve with plenty of sauce — aioli, marinara, or chimichurri provide moisture that compensates for the tough texture
- 4 Slice into thinner rings — thinner slices chew faster and reduce perceived toughness
If it's still wrong
- Transfer chewy fried calamari to a covered pan with a splash of white wine and simmer over medium-low heat for 25 minutes — braising reconverts it back to tender.
- Use chewy calamari in a seafood rice dish (paella or seafood risotto) where it braises with the rice and re-tenderizes.
Prevent next time
- Fry calamari at 375°F for exactly 60–90 seconds maximum and remove immediately — use a timer.
- Score the squid rings with shallow cuts before coating — the scoring releases tension in the muscle during cooking.
Substitutions
- fresh squid → frozen-thawed squid (often more tender due to cell rupture during freezing)
- white wine → dry vermouth for a similar braising liquid
