Caramel Too Hard

  • heavy cream
  • butter
  • saucepan

Why it happened

Caramel hardens when the sugar concentration is too high. Adding cream increases water content and lowers the setting point.

The fix

Save
  1. 1 break the caramel into pieces and warm with 1/4 cup cream over low heat
  2. 2 stir in 1 tablespoon butter for smoothness
  3. 3 add a pinch of salt and cool slightly before serving

If it's still wrong

  • Crush into shards and use as a crunchy topping.
  • Melt into coffee or hot chocolate for a caramel drink.

Prevent next time

  • Stop cooking at 225 to 235F for sauce consistency.
  • Remove from heat early; carryover heat continues cooking.

Why this works

Caramel texture is controlled by sugar concentration. Adding cream re-dissolves the sugar crystals and brings the caramel back to a pourable consistency.
