Shrimp Breading Falling Off

Ingredients on hand
- shrimp
- paper towels
- flour
- egg
- breadcrumbs
Why it happened
Moisture prevents adhesion. A dry flour layer and hot oil set the coating quickly so it sticks.
The fix
- 1 pat shrimp very dry and dust lightly with flour
- 2 dip in egg and press into breadcrumbs firmly
- 3 let rest 2 minutes before frying at 350F
If it's still wrong
- Pan-sear the shrimp without breading and serve with a sauce.
- Chop and use in tacos with slaw.
Prevent next time
- Keep shrimp cold and dry before breading.
- Fry in small batches so the oil stays hot.
