Shrimp Breading Falling Off

Ingredients on hand

  • shrimp
  • paper towels
  • flour
  • egg
  • breadcrumbs

Why it happened

Moisture prevents adhesion. A dry flour layer and hot oil set the coating quickly so it sticks.

The fix

  1. 1 pat shrimp very dry and dust lightly with flour
  2. 2 dip in egg and press into breadcrumbs firmly
  3. 3 let rest 2 minutes before frying at 350F

If it's still wrong

  • Pan-sear the shrimp without breading and serve with a sauce.
  • Chop and use in tacos with slaw.

Prevent next time

  • Keep shrimp cold and dry before breading.
  • Fry in small batches so the oil stays hot.
