Shrimp Undercooked

  • undercooked shrimp
  • skillet
  • oil
  • salt
  • lemon

Why it happened

Shrimp cook quickly and become opaque when the proteins set. A brief hot sear finishes them without overcooking.

The fix

  1. 1 sear in a hot skillet with oil for 30 to 45 seconds per side
  2. 2 remove as soon as they turn opaque and pink
  3. 3 finish with salt and lemon

If it's still wrong

  • simmer briefly in a sauce until opaque
  • add to a soup at the end of cooking

Prevent next time

  • cook just until they curl into a loose C shape
  • use high heat and short time
