Ingredients on hand
- undercooked shrimp
- skillet
- oil
- salt
- lemon
Why it happened
Shrimp cook quickly and become opaque when the proteins set. A brief hot sear finishes them without overcooking.
The fix
- 1 sear in a hot skillet with oil for 30 to 45 seconds per side
- 2 remove as soon as they turn opaque and pink
- 3 finish with salt and lemon
If it's still wrong
- simmer briefly in a sauce until opaque
- add to a soup at the end of cooking
Prevent next time
- cook just until they curl into a loose C shape
- use high heat and short time
