Noodles Too Soft

Ingredients on hand

  • cooked noodles
  • skillet
  • oil
  • soy sauce
  • scallions

Why it happened

Overcooked noodles absorb too much water. High heat evaporates surface moisture and creates a firmer exterior.

The fix

Save
  1. 1 spread noodles in a hot oiled skillet and sear 2 minutes
  2. 2 toss with sauce only after the edges crisp
  3. 3 add scallions or crunchy vegetables for texture contrast

If it's still wrong

  • Bake into a noodle casserole where softness is acceptable.
  • Use in a soup as soft noodles.

Prevent next time

  • Undercook noodles by 1 minute if they will be sauced.
