Noodles Too Soft

Ingredients on hand
- cooked noodles
- skillet

Why it happened
Overcooked noodles absorb too much water. High heat evaporates surface moisture and creates a firmer exterior.
The fix
- 1 spread noodles in a hot oiled skillet and sear 2 minutes
- 2 toss with sauce only after the edges crisp
- 3 add scallions or crunchy vegetables for texture contrast
If it's still wrong
- Bake into a noodle casserole where softness is acceptable.
- Use in a soup as soft noodles.
Prevent next time
- Undercook noodles by 1 minute if they will be sauced.
- Rinse briefly and toss with oil after draining.
